Two Chocolate Cocktails from Aspen’s Jerome Hotel



 
 


Executive Chef Evan Francois of the iconic Hotel Jerome. a RockResort in Aspen, Colorado shares his recipes for Chocolate Dark Cherry Martinis and White Hot Chocolate. Chocolate Dark Cherry Martini. These cocktails are served in the hotel’s three award-winning restaurants, including the celebrated J-Bar and The Library lounge.

 

Chocolate Dark Cherry Martini

5 oz organic vodka
1 1/2 oz chocolate liqueur
20 Fresh cherries
1 ea carmel spear
1 ea chocolate covered cherry
1 oz chaved white chocolate

In a plastic container, mix 5 oz of vodka with 20 steamed and seeded cherries. Blend and strain until smooth consistency. Let mixture sit over night.
To finish the drink add chocolate liqueur, mix in shaker and serve. Garnish with pulled caramel, cherry, and shaved white chocolate.

 

White Hot Chocolate

1/2 cup whole milk
2 oz vanilla syrup
Pinch kosher salt
1/2 vanilla bean
1 oz white chocolate, chopped
1 oz white chocolate liqueur (Godiva)
1 oz Triple Sec
Marshmallows for garnish

Heat milk, vanilla syrup and salt in pot until the mixture is hot. Cut vanilla bean and scrape out seeds. Add to mixture. Add white chocolate and stir slowly at medium to low heat. Add chocolate liqueur and Triple Sec.

Hotel Jerome dates from Colorado’s silver boom in 1889, when it was founded by Jerome B. Wheeler, the co-owner of New York’s Macy’s department store.
