Chocolate Salami

This simple, eye-catching recipe is featured in Alain Roby’s American Classics: Casual and Elegant Desserts. Serve chocolate salami sliced with fresh strawberries or on top of a Brioche Pizza.

Makes 30 slices

3 sticks unsalted butter
¼ cup cocoa powder
¾ cup sugar
2 eggs
2 cups crumbled butter cookies

In a medium saucepan, melt the butter with the cocoa powder and sugar. Slowly add the eggs and bring to a boil.

In a large mixing bowl, combine crumbled butter cookies and the chocolate batter, mixing thoroughly. Allow the batter to cool completely.

Once cool, move the batter to wax paper and roll to form a 1-inch tube. Refrigerate for 2 hours. Cut the chocolate salami into ¼ inch slices and serve as shown.
