John Rossetti of 2Taste Catering,
based in North Miami Beach, is a favorite caterer for gala
corporate and celebrity events. His theatrical flair comes
from his 12 successful years touring the world as a singer
and dancer. At the same time, he developed an appreciation
of cultural flavors. He blended this experience with years
of managing Manhattan and Miami culinary landmarks,
including The Sea Grill at Rockefeller Center, The American
Museum of Natural History, The Fontainebleau Hilton, and the
Tides Hotel in Miami Beach
Rossetti loves Raspberry-Chocolate
Brownie Trifles. It can be prepared and stored in a cooler
and will keep. It is heartier than one might think.
2Taste Raspberry-Chocolate Brownie Trifle
1 pkg. of your favorite chocolate
brownie mix, for a 13 x 9 inch pan
1 qt. (4 cups) cold milk
2 pkg. (4-serving size each) your favorite chocolate flavor
instant pudding and pie filling
8 oz. fresh whipped cream or whipped topping
2 pints fresh raspberries
Prepare brownie mix and bake in
13x9-inch baking pan as directed on package. Cool completely
on wire rack. Cut into 1/2-inch cubes.
Add milk to dry pudding mix in medium
bowl. Beat with wire whisk 2 minutes or until well blended.
Layer half each of the brownie cubes,
pudding, whipped cream and raspberries in large glass trifle
bowl. Repeat all layers. Finish with whipped cream and
raspberries as top layer. Serve immediately or cover and
refrigerate until ready to serve.
